Heresy I Know, But What About A Brick Pit?


 
I have a WSM right now and it is just not convenient to use it frequently at my house. Long story but we live in Florida on a zero lot line house and I always have to move it to our patio to use, place it by the pool, etc. I love the results but want an easier solution.

I was thinking that I might build some type of smoking pit out of blocks or bricks. Just an idea but am wondering if anyone has done it, if it's hard to get good results, and what the process of building it was like.

I have a book that has construction plans and details about building a fire pit bbq. I have NOT built it! This is a maybe someday project.

How would a brick pit be more 'convenient'? I'm not seeing it. Can you not just leave the WSM by the pool or on the patio? It takes up less space than typical brick pits. What am I missing?

I have used many brick pits but only made the very large ones (CBS) used for whole hogs. Many are designed more as grill pits than smoke pits--but that can be (and I did) modded for better smoking. If you look at plans with an eye toward smoking, you should be able to easily tell if the pits in question need to be modified during building.

You're probably right - it wouldn't be more convenient. I guess I was just thinking it might make for a more streamlined look when smoking and the fact that it's there (rather than me having to move the smoker)might mean I would use it more.

I think I'll stick with the WSM.

Since wind can be a problem with the WSM (and many others) perhaps an attractive (in some way) windscreen can be fashioned so that the cooker can stay in one place that's convenient?

Side note: Get a pork belly and/or a brisket flat and make your own bacon and/or pastrami. You'll never go back to store bought. These items, plus a few others, plus the 'usual', means you'll use the cooker more and more.
 
Could you build a closet or shed and put the smoker in the shed? I suspect the shed could be built so it might be more attractive.
