Help! Ready to cook ham times.

Now that I think about it, I think last year I bought cooked hams that I smoked to temp. This year, I've got two ready to cook shank hams that are about 8 pounds a piece. If I leave the water out of the pan, how long at about 300 to 325? One is for a friend who wants to pick it up around 11:30, and I'd don't want to start at 5 am!

Ready to cook ham is 30 to 45 min per pound or until the internal reaches 145 + (that's your call).

My Double Smoked Ham recipe calls for pulling the ham at 135* and wrapping with two layers of foil and a towel for an hour or two. The internal temp will rise to the recommended 140-145* for cooked ham. Once the hams nice and happy you unwrap for a half hour before slicing.
