HELP...How much brisket do I need?


 
with that much side meat figure out about .5 pounds uncooked per person maybe a scootch more. can always send leftovers home

for total meat i usually figure about .8 pounds per person then add 15%. some people will eat more some less rest gets sent off or put int he freezer
 
I just finished a cook for 50 guys. Did two 15# packers (sliced the flat and made burnt ends), 60 chicken thighs, 8 pork tenderloins and 18 kielbasa suasages. Just had enough meat. Probably could have done a flat to go along with the packers.
