Hi,

I've been lurking for a while and am hoping to "bite the bullet" this weekend!

I'm replacing my "cheap offset smoker", with a 22.5" WSM. When I bought my old smoker (3 yrs ago) I was actually looking for a grill (not a smoker!) with a hinged lid, and that allowed for adjusting the temperature by raising/lowering the the charcoal bed. When I stumbled on a Chargriller. It seemed to be what I was looking for, and it could "smoke" too, whatever that was...

After extensive googling to find out what BBQ/smoking actually was, I tried to smoke my first rack of baby backs, and where it had been ignorant darkness, there was light!!! Even my wife, who didn't(!) like ribs, thought they were delicious!!!
