My name is Rick Marsh and I had been in the restaurant biz for roughly 20 years before I decided to change careers. But my interests are still cooking and entertaining. I just finished up a Weber Smokey Joe Silver upgrade to a smoker and I am actually very happy with the way it has turned out! As a matter of fact I have just started a bacon smoke about 45 minutes ago!! Keeping my fingers crossed that this turns out the way I'm hoping! I put together a cure of 12 oz of peach preserve, 1 cup of Kosher salt and 1 cup of dark brown sugar.
