I just purchased a new WSM 22.5" and am very excited to use it for the first time. I am not new to smoking and REAL BBQ, as I spent 18 years growing up in Texas, so certainly had exposure to good BBQ. In Texas, it was more beef brisket than anything, done with mesquite. That is my love. Although I am getting more into butts/shoulders and ribs. Love to experiment with my own rubs and sauces too. I have been using a Chargriller smoker with side firebox for the last two years. Still have it, but diversified with the WSM. Interested to see difference in cooking. I don't usually use water during my cooks, so having a water based cooker is new to me.
 
Welcome aboard Jeff! Congrats on your new smoker. I think you will find that once you get a cook or two down on the WSM you will definitely see the difference
between it and the Chargriller. :wsm:
 
I am a displaced Texas as well Jeff. I agree with Mike -- it's night and day. NO babysitting required. Also, try experimenting with and without water in the pan once you get a nice seasoning on your cooker. I've done both and have found a significant difference. Look forward to your cooks.
 
Welcome aboard Jeff. I used to visit the Ontario and even London and Toronto areas many times when I lived in Upstate NY yrs ago..Your going to really love the versatility of your new smoker and the info that you can get here on the board.
 
"Set it and forget it." That's the difference baby!

Smoking will never be the same now that your using the WSM.
