Hi folks, happy to join. I live on Eastern Long Island and have been long time Weber user.
Last 2 years almost every cook has been on my WSK, this has pretty much replaced my WSM and Weber Genesis gas grill. Sent the Genesis to the curb a few months ago for scavengers/recyclers to enjoy...was a nice unit but took up space and never got used. Still have the WSM but only used it once since big big brother showed up. That was for jerky, couldn't figure out a way to hang the long strips in the WSK, at least not in the quantity I was trying to smoke.
I'm also a Thermoworks fan and use the Smoke X4, Billows and Thermapen frequently. Have an old Dot I am thinking to use for data logging on cooks since Smoke X doesn't provide that capability.
I cook outside year round, at least once a week during the winter and probably more like 3 times a week in summer and fall.
Other hobbies include beer brewing and dogs.
