Hi everyone. I've been a keen lurker for months if not years, but feel able to register now I've taken delivery of my WSM 57cm!

Did my first empty run yesterday, and am taking a trip to my local 'artisan' butcher (Turner & George) to pick up some beef and pork ribs for a first food-filled run over the weekend.

Took delivery of 4 12kg bags of charcoal lumpwood as well today, which considering I live in a minuscule basement flat, has taken up a significant portion of my kitchen. Better get cooking to make myself some space!

I've found the site absolutely invaluable when it came to deciding what to buy and what accessories to get. I also invested in the ES-733 remote thermometer which I've confirmed works from the garden to my bedside!
 
Hi Chris. Welcome to the forum! The WSM is a great smoker. Excellent decision on the thermometer--proper temperature monitoring and control is vital.
 
Welcome to the forum Chris! I'm pretty new here myself and I've found everyone here really friendly and helpful. It's the perfect place to find inspiration for your cooks!

I'm like a kid at Christmas right now - I just can't wait to get stuck in!

I'll certainly take lots of pictures when I do my cooks, and I have a notebook where I'm going to keep a record of my cooks so I know what changes I made. I shall be boring you all later on today, so be ready....
