Hi everyone! I've been lurking on this forum for some time and have enjoyed reading everyone's post, looking at pics and trying out recipes and figured it was about time I started to contribute! I've been into smoking with the smokey mountain 18.5 cooker for about 5 years now; and truth be told, I enjoy each cook more than the last! I also really enjoy to grill as often as I can, but the weather lately has been restrictive. I look forward to becoming a part of this community, and also post to twitter under AJWard549 - hope to meet some great folks here!
 
Hey AJ. Welcome. This is a lot of fun and it's unbelievable how much you can learn, regardless of how long you've been grilling. Look forward to seeing some of your cooks.
 
thanks for the warm welcome everyone! i hope to get grilling again this week and am planning my next smoke soon. have never done a brisket, but have also seen on here where guys have done their own bacon! now that's something i can try to sell to the wife!
 
Welcome AJ. If I let the weather rule when I grilled I'd probably only be able to grill 5 months of the year. Get your butt out there.
 
Thanks everyone! I've been reading "Barbecue crossroads" by Robb Walsh and am really wanting to try a brisket for the first time! But first, I'm going to try out the new lodge cast iron wok I received for my birthday!
 
Welcome. My wife grew up in Knoxville. I'm not sure of which high school she went to, maybe West? Anyway we went back there for her 10 year reunion about 15 years ago. Beautiful country. We were there in the summer, so it was a little humid, but other than that, it was very nice. She did 3 years at UT, but eventually ended up getting her degree at Washington. Still lovely country. I wasn't into bbq back then, we did eat at Buddy's (?). Wish I could have checked out more bbq.

You should run down to the store and get a brisket right away. Not having done one before shouldn't stop you. I've done more overnight briskets, but have been thinking about trying the high heat method to see how that works. Only problem, kids and wife like pork and chicken and meatloaf better than brisket.
