Hello from Kentucky


 
Hello everyone! I’m excited to start using my WSM. I recently got it after using my Weber Performer Deluxe with much success, but wanted something solely dedicated to smoking. I got up early this morning and am trying my best to cook up some pork butt with a recipe and process that I found here. I’m also using a Thermoworks Smoke and so far I haven’t managed to burn anything. I look forward to reading and learning from you all.

I picked the name because I’m an assistant principal at a school in Kentucky. One day this kid wasn’t showing any patience so I told him good things come to those who wait. I tried to explain with an example about BBQ, patience, and good things. Kid didn’t listen and yelled, “I’ve heard enough principal pork chop!” Lol
