Quick note: been using this site for several years and finally signed up.
My background history:
I grew up watching my dad smoke whole hogs on his smoker (he used a big converted gas drum) which later he changed to sections of the hog. They'd smoke the hog all day and at night his friends would come over and slice up the pig and drink beer. Those were the best cooks. So that's where I started my love for BBQ
I would help him later on in life but really started getting the passion in my 20's, but never had my own smoker due to apartment living and whatnot. I started off with a pellet smoker and quickly transitioned to the WSM. I've been using that for about 3 years now.
I make my own rub (my dads concoction) and now use that in combination with my base rub.
My usual cooks involve ribs, pork loin and brisket.
Anyways, I'm always looking to get better and am happy to finally join the forum.
