Just picked up a 22.5 WSM yesterday to go along with my other Weber's. Got it for $399.99 out the door beautifully assembled from a local BBQ shop, pretty good deal I think?

Did a first cook, 2 quartered Amish chickens on the top grate...

Used my current favorite charcoal from Trader Joe's, really nice stuff and a fair price. 2 chunks of wood apple and hickory.

Because I knew the chicken would finish pretty quick I took a few hours to get a good feel for temp control, easy as could be!!!

Did the minion thing and once all was assembled it took about 40 Minutes to reach a nice steady 275 on my digital placed on cooking surface, stock thermometer read about 255.

Ran steady for 2 hours with bottoms at 3/4 open, then I went all full open to see what I'd get and got close to 300 for an hour.

Damped it back down to 260 and let the bird fly, 2 hours later done, turned out great.

Sunday will be my first Brisket and I'll add some photo's of that cook.

Welcome John! I found the stock thermometer to be lower than the top cooking grate throughout my cooks as well. We'll just have to keep experimenting!

Since you are in the Detroit area, if you ever have the opportunity to tour the
GM Heritage Center in Sterling Heights, a very cool place it is.
