Longtime smoker, first time poster. Ive used several different types of smokers, but this is my first charcoal vertical smoker (and weber!). Just received my 22.5 WSM today. Put it together and wasted no time firing it up. After reading a few issues about new units running hot, I figured I better try it out empty. I was able to maintain 225 (lid gauge) with 2 lower vents closed and 1 half open, water pan half full and top vent fully open.

I've already gained a wealth of knowledge about the WSM on this forum and hope I can contribute something back in the near future.


Now, what should be my inaugural smoke this weekend, ribs, butt or brisket?
 
With a 22.5" just do all three! First thing I did on my wsm was ribs, but you can't go wrong with butt or brisket. I really like the long slow cooks of pork butt and brisket, and that where the wsm really shines.
 
Welcome to the forum. Whatever you decide to cook don't forget the pictures or it didn't happen.
