Newbie to Weber kettle charcoal world but a long time user of the genesis ii series. I just purchased a weber original premium 22" looking for ideas and learned from the veterans about different techniques in the world of charcoal grilling and smoking.:wsm:

This is so true. I smell the scent of someone, somewhere, making an effort and gave them a little thumbs up on the inside.

was just in Victoria BC last week. Such a beautiful city and port. It's on our vacation list now. truly beautiful!

You mentioned a new kettle. I'm sure you'll a ton of suggestions for an accessory or two, or three, or four.

Ok, I'll start.

Char Baskets for indirect heat on both sides.
Vortex for killer hot heat in the center and indirect all around it.

Hi Francis, welcome from PA! Dan’s right about the Vortex. I love it for wings, thighs etc., and if inverted, it’s great for doing a whole bird!

Oh wow, thanks Duane for sharing! This setup and the slow cooking method are what piqued my interest in the weber kettle world:wsm:
