Hello All,

My name is Rob...originally from RI but relocated to Ft Worth Texas about 2 years ago and quickly picked up the hobby of smoking meats. I have a Masterforge propane smoker(wife got me this one for me as a wedding gift after my neighbor got me hooked on wanting to learn how to smoke meats). Then I got a Kamado Joe Big Joe.....and now I'm looking at getting a 18.5" Weber. I feel based on what we like to cook, how often we entertain, and the amount of people involved(just me and my better half)...that this size is adequate as a 3rd cooker for my addiction! Ha I posted a thread requesting to see cooking pics on the 18.5"... Basically if I can get two racks of ribs without using vacrib rack, I'm in! But if it requires a rib rack so be it. Looking forward to making new friends here!

Welcome Rob.

No need to get a rib rack. If you coil the ribs like a jelly roll (but not touching) and secure with wooden skewers top (and bottom if they want to uncoil) where the end overlaps, you can fit 3 3lb racks on each grill (so 6 racks in the 18" WSM).

Like this:

or if you want to use a rack, like this

I find that if I use a rack, the bark tends to get "scraped off" when I remove the ribs.

I have the same rib Rack as in the lower pic. Great way to do it. I can get 3 racks on my 22" OTG with my Slow 'n Sear easily that way!!

Thanks!!
