Hea everyone from sunny Florida


 
I've had a 22.5 weber smoker for a year and I love it. Very versatile and does a great job of holding temp. One thing I have had a problem.with is when setting up my fire I have noticed that the coals have to burn down more that it indicates on weber's website, or your food comes out very smokey smell and taste. Does.anyone else have any suggestions or have had this issue? Any suggestions would be awesome.
 
Welcome Keith! Are you using brickettes or lump charcoal? I've noticed some variation between brands of brickettes.

Start your snake or 2 zone setup in advance (30 min at minimum) when all the briquettes turn totally grey.
That is the right moment to put the meat on.
