I have received my t-shirt.

So I am going to try my first brisket.

Its a 5.5 lb flat from Costco. Put some mustard on it and rubbed it with a rub I found at Academy. I post some finished pics later, wish me luck.
 
Waiting to see how your brisket comes out Ray! Almost missed this post since it ended up on page 2 just like most of the cooks from yesterday and today! :mad:

The brisket went about 8 hours, foiled for another hour until it reached 198. Then set in cooler for 1 more hour.

It sliced well.

It tasted very good. However, it was a bit on the dry side. I didn't inject or spritz at all. Just a bit of beef broth in the foil. Any suggestions?

Thanks Brad, I think I will try that with the next one. May even try to inject or baste too. The Brisket alone seemed a little dry but when a little sauce was added you couldn't tell. The family loved it so I guess thats what really matters.
 
Looks great to me! I usually foil at 165F, bring her up to close to 200F, give or take, and let it rest for several hrs in the foil. Nice brisky there!
 
NIce looking brisket. My costco now has whole packers and I am tempted to try one as I have only done a flat before. Yours looks way better than my flat attempt!
