Have 2 butts...kitchen twine together?

I have 2 butts at 7.22 lbs each all ready with the rub and sitting in my fridge for tomorrow evening to set in the smoker for an all nighter. I'm trying to get this ready for brunch so I'm planning on setting it in around 5pm.

Should I twine the 2 butts together or just leave them side by side? Would it be fine to have them side by side?
 
Joel,leave 'em separate. They'll get done at about the same time as tying them together. Tying together won't make a larger mass,just two halves closer together.
Also,I've heard tales of people getting a "hammy" taste and texture from rubbing your butt too early. I always rub just before I put it on the smoker. HTH
 
Joel, I agree with Phil. Just wondering WHY you would want to tie them together? I never heard of that before.

Ya know, sometimes I split butts into 2.

I do it mostly to get 2x the bark!

Keep them seperate, you will have more bark / cooks treats.

If your bottom rack is open, put one on each rack. If not, put them together but you will lose the bark if they touch.
 
I don't have any "touching" issues with 2 pork butts in the 7-9 lb. range on one rack. I checked my log and found that the largest two I cooked on one rack was an 8.5 and a 9 pounder.

Sometimes they do spread out a bunch though, so you can't go just by weight. I've just had no problems... sort of squeezing them up to not be so flat, and besides, they'll shrink some anyway. I guess you could always use a tin cookie cutter between two that spread out a bunch, but there shouldn't be any problems on two this small.
