Happy New Year, Chris and everyone at TVWBB! Just filled the WSM up with a 5lb chuck roast, and 2 9lb butts for my last smoke of 2007 and first of 2008, all in one shot. Good eatin' tomorrow :P

Since 2004 I've been doing my pork and kraut on the WSM, this year will be no different.

I'm doing 2 butts and a brisket right now, and into the new year (a little over 3 hours from now here). Hopefully I can get some sleep and not make shoeleather brisket!
 
Happy New Year to all. Started a 7 1/2 pound bone-in butt this morning and it turned out awesome!

Seventy pounds of butts on the CTO to pull and bag for a catering job next weekend.

Also had a bowl of lump burning in the WSM for keeping warm while fiddling about in the garage. That led to a weenie roast over the coals. Not quite prime rib but still pretty tasty!

we're doing a tri tip and some St. Louis style pork ribs. Had em on for 4 hours and 33 minutes and all is well so far. Made up some home made BBQ sauce and can't wait till their done.
 
just pulled the tri tip off the smoker and foiled it wrapped it in towels and in the cooler it went. Just swabbed the ribs for the first time, and figure I'll get two more swabs in before pulling them. Today's is the first time since I've owned this smoker that I was able to maintain a temperature for more than an hour. Made my day...
 
Did some surf-and-turf on the grill. Seared Ahi tuna and Bison strip steaks. Good stuff.

Q'n, Golf'n & Grill'n....too many choices!
