Questions on this rack.....are the crossbars from which the meat is hung moveable? Do they slide across the support bars? Are they captured by the support bar or do they just rest on the support bars? I am interested in the product as I hope to make some Kielbasa and am looking for a solution to hang multiple rounds of sausage for smoking.

Yes, the crossbars lift off and rest on the support bars. Should work great for sausage.
