There's plenty of meat on each of 'em. Depending on the size of the pot of soup I'm making, I'll throw in one or two. After they cook for a while, take 'em out, let 'em cool, pull the meat off, chunk it up, and return it to the soup.

Actually, there's more meat on these hocks than the ones that I usually see in the store.
