Halibut Olympia !

Just had to try this on the BBQ! Totally an inside cook but hey why not!! So after a morning of yard work, exercising the dog and knockin a few things off the honey doo list it was time for a margarita and my buddies windwood& Clapton while checking out my favorite BBQ wesite!!http://tvwbb.com/eve.

Thank god I was already home or we'd be hungry!!

Ok some cooking!!! Halibut Olympia is a baked fish dish with a sour cream/mayo mixture, onion, and breadcrumbs! Here is how she went down!!

Weber table really loaded up!

Onions and butter heating up in a pan and chunks of butt with S&P and a bit of garlic just seared for about 45 seconds a side on the cast iron!

Did this in three batches and place in the pan on top of the onions!

Then all in the pan with the sour cream mixture, bread crumbs, white wine, lemon juice, tyme and shredded cheese!

20 minutes later it looked like this!

Then added some fresh beans with oil, and red wine!

And plated with some grape tomatoes soaked in balsamic vineager, parsley and S&P!!

VERY IMPRESSIVE! You have my attention with the seafood. I haven't done any and I'm taking one of my 22"OTGs to the gulf this spring. You make that look easy!
