This is the only spinach thread that I could find on the fly, but I must post -- Kevin's method should be a separate "Spinach" thread.

I've been using Kevin's method for the last year or so and must say that, as spinach lovers, this is the best method that I've found for preparing spinach for sauteeing. We're having it again tonight.
