Daniel, Sorry I didn't chime in on this one sooner, too much work and not enough cooking. I have to go a long way to beat this post. Great Job.
 
I've tried for years, but am still trying to find doener kebabs in America. You can't walk 10 feet in Germany without tripping over a doener stand. They are basically gyros, but a little different. In the bigger cities, they seem to be mostly out of turkey.
