Guava wood with Spares and Backs?

I want to try my new guava wood however has anyone used it with Spares and Baby Backs? I have the MM started so I will be throwing the wood on in about an hour.

Go for it! I have done ribs with Guava wood, it was excellent. Guava is good with pork, chicken, beef. I have even used guava mixed with hickory, at a 2:1 ratio.

can you sorta discribe how the guava wood tastes.....i like hickory and cherry....how does it compare.......thanks

just wondering if you can describe it.. no idea how i would..but thats why im aksing you

I don't know if I can describe it myself. Two issues... One, I'm terrible at describing things like flavors. Two, I glazed the ribs and didn't keep a sample dry, so I'm afraid that the glaze masked the real wood flavor.

But... here goes... The smell of the smoke was light and slightly sweet. It was similar to other fruit woods in that respect. Probably closer to apple than to cherry. Its hard to tell from the pictures because of the glaze, but the ribs had a dark, mahogany-like color.

I used one chunk of guave in the charcoal starter, and buried four other chunks in with the unlit briquettes for a MM burn.

Hope that helps... I really liked the results, and I want to try guava on a picnic or some chicken next.
 
Pictures comming tonight. And let me just say this. My father-in-law who always eats my ribs covered in sauce ate them dry right off the WSM. He said he had never tasted a flavor on ribs like this before.

well done....thank you... perhaps ill give it a try too.. couldnt hurt......
why do you start on in the chmney starter.. is that so its fully engulfed when you put it in the smoker...

great idea.. if thats it.. i think ill do that next time...

Yep... that's why. I really don't know if it makes a big difference, but i do it. They guys that I cook with at comps do this, and they turn out some good food, so I started doing it that way as well!
