Did these chops a while ago and crushed them. Tried them again tonight with excellent results. Decided to try a reverse sear on them instead of direct the whole time. Came out perfect.
Ready for the heat.
On indirect for 10 minutes, then checked the temp (it was 115) and flipped. Cooked indirect for another 7 minutes and checked (up to 130). The direct until it hit 150.
Off.
Plated with my wife's homemade pasta salad...Delicious!
