Had a pretty good amount of used coals from a previous cook left in my WSM, so, I picked up a nice chunk of pork loin and cooked it up. Didn't use any smokewood, just the charcoal. No water pan, just a foiled pizza pan to block the direct heat of the coals. Pulled it off at a little over 140 degrees and let it rest a bit. Probably, the best pork loin I've cooked to date.
