Grilled Pork Chops

Marinated both chops in Italian dressing for 36 hours. One was dusted with Southern Delight and the other with Byron's Butt Rub.

Onto the grill, with a few chunks of apple wood, direct for about 2 minutes each side.

Then indirect until my target temp of 145.

Chops off the grill at 143 internal. Will foil tent until rice and string beans are ready.

Plated with some Saffron yellow rice and french green beans.

Chops were very moist and tender. Guess the 36 hour marinade didn't hurt them at all. With the bad storms we had Saturday, everything got pushed back a day, after I had already placed everything in marinade. Oh well, can't control mother nature

Fantastic, too bad overher they don't sell them this thick, but I'm gonna ask if they can cut some for me.
