That sounds like a great place you found Mark! I'm going to talk to them about the grain finish. I'll be interesting if nothing else. The free side of beef for a side of pork would be right up my alley but that would be a tonne of meat!!

I was at Oyama's last weekend, funny you mentioned Elk. I picked up some of their Elk Prosciutto and Scottish Black Pudding. Good good stuff. I hav eto get there more often!

I showed my wife the original post with the picture in this thread. She said that the plate looked good. I told her what it was and asked if she would try it? She replied never.

Me personaly would try it. I'm so hungry I could eat a horse!
