Yeah, wife doesn’t like shrimp and either does daughter. So four shrimp eater for dinner and two salmon and 5/6ths eat salmon. The things I do to make a meal.

Just the grilled eggplant, ricotta, pecorino, mozz, sauce and noodles.
Assembled the whole thing with uncooked Barilla lasagna noodles in the layers and then baked it covered so the pasta cooks and absorbs the excess moisture.
Then layered the sliced mozz and cooked it uncovered for 30 minutes.
Just shared some with the wife and I had a small piece. It’s really good.
The eggplant is cooked with evoo, spg and Italian seasoning.
A little lighter without the meat. More summer style with the heat outside.
