Grilled Eggplant Dish

I grilled some forgettable burgers tonight, so no pictures of those. Also mac-n-cheese and corn for the kids, again not worthy of a picture. However, this was worth a picture. I grilled thick slices of eggplant and a red bell pepper, sliced both, topped with some chopped green onions and a dressing. The dressing was a clove of garlic, an equal amount of the white parts of the green onions, lemon juice, olive oil, salt, cumin and a little cayenne.

Next time I make it, I'll probably use 2-3 eggplants and make a bigger batch of it. I think it would be great with feta cheese, and maybe some diced grilled chicken. It could also be very good served over some greens, maybe aragula or spinach. If you like eggplant, give it a shot!
 
Excellent Ethan. Have you tried eggplant parmesan on the grill? I recommend it! Grill the eggplants, assemble the ingredients in a pyrex dish. Line the outside bottom with foil. Cook indirectly for 20-30 minutes until done.
