Grilled Chicken Thighs with Mango Slaw
1/4 cup extra virgin olive oil, divided
4 tsp. Tajin, divided
4 tsp. honey, divided
1 3/4 tsp. table salt, divided
8 boneless, skinless chicken thighs, trimmed
1/2 tsp. grated lime zest
3 TB. lime juice
1 14 oz. bag coleslaw mix
1 mango cut into thin strips
1 red bell pepper, sliced thin
1 small red onion, sliced thin
1/4 cup chopped fresh cilantro
Whisk 2 TB. oil, 1 TB. Tajin, 1 tsp. honey and 1 tsp. salt together in large bowl. Add chicken and toss to coat, rubbing seasoning into chicken.. Whisk lime zest and juice and remaining oil, Tajin, honey and salt in second bowl Add coleslaw mix, mango, pepper, onion and cilantro and toss to combine
Grill chicken.
