Grilled Beets an' Pork Steaks

Jim Lampe

The local Pick N' Save had pork steaks and butts "on sale" for a buck 99 a pound (some sale). Butt these cuts were thicker than usual so I bought up three double packages and grilled two steaks...seasoned with Blues Hog Rub.

added halved Yukons and a sweet Vidalia and a tight-foiled packet of sliced beets.

The beets were marinated in Balsamic vin with fresh rosemary (from the Lampe Estate Gardens

), fresh crushed garlic and a dash of herbs de Provence. After 20-25 minutes in it's cocoon, the beets escaped to face direct heat.

Everything is comin' along nicely...
used a combo of Bandana's Memphis Style and their Southern Style Bar-B-Q sauces to baste the pork steaks...

Left the beets on too long, no longer beet-red

and the awnyons got charred pretty well... butt I plated everything up...
...slapped some butter on the taters (like they needed butter

), cracked open a cold Mexican brewski then sat down to eet

I'm tellin' ya, these PnS pork steaks are the lions' roar!
You'd think after that big ol' plateful o' food, i'd be done for the day...
Nope-erie! The neighbors brought over a Door County cherry pie upon returning from a two day vacation... a reward for letting their puppy out a number of times (yeah, like REAL hard work).
Anyway, the pie was hacked up to eet a coupla pieces.

It was as good as everything else we ate tonight.

Guy, i like hot stuff, and Blues Hog rub to me is not hot. Oh, it does have a kick to it butt i would not call it hot.

That's some good-lookin' eats there Jim!

Never thought to grill beets before - looks like you put some fennel or something on 'em. Please provide more details.

Did your neighbors use fresh cherries in the pie? My folks, up in Manitowoc, just got back from some cherry picking up in Door County. Reports are that the farmers there say that this is the best cherry season that they've had in about 40 years! Branches were cracking under the weight of the big clusters of big, tart cherries.

I've been trying to talk the wife into a trip up there to pick some. None of the stores around here carry D.C. cherries - except frozen.

Hmmm..... Bet some of those cherries would be good in a chutney / glaze for some rotiss pork loin or chops, or blended with some Sriracha for a variation of Larry Wolfe's wing concoction.

Don't over grill the beets like i did John...
icon_frown.gif

...and, I highly doubt it Bob!
In fact, I was gonna ask YOU how YOU do PS... I need advice!

Mr. Lampe, is there anything you wouldn't grill? That looks great, but I'm not sure I'm ready to try beets....

Jim...let me tell you a story and ask you a question.

Story. Last week I was at Whole Foods in La Jolla and in my effort to be super healthy and righteous I bought, among other things, two plump beets. Well, not being a very well educated man when it comes to beets, I decided to eat one raw, like an apple. Well, like a peeled apple. Took one bite and....urghhh. Gross. But, being the stubborn man that I am, i decided to eat the entire thing, slice by slice.

Do not do this.

2- Why do your meats always look like they have a slight yellow glaze on them? do you use a mustard base to make the seasonings stick, like some do with ribs? Or is it the lighting? your camera?

Thanks!!!
