Dicky F here. I've been doing barbecue for around ten years.
I started with a Home Depot Char Broil offset which while being really inefficient, has served me pretty well.
I took the plunge and bought a 22.5" WSM a couple of weeks ago and have so far only done two shoulders which honestly were about the best I've done to date. The Weber works really well and the best part is how little charcoal I used.
I've tried many different types of charcoal so far. Everything from KBB to Wicked Good lump and pretty much anything in between. I've come to really dig the Stubb's briquettes from Lowe's. If you haven't tried it, you should. Lots of heat and the ash is just a beautiful whitish grey so I assume that whatever binder they're using to hold it together isn't something nasty.
I've been running a Stoker from Rock's BBQ as a temperature control unit for a few years, but have grown tired of its shortcomings. I am putting together an order from various suppliers to build a Heatermeter unit and that is my primary purpose for joining the board. I can't wait until my parts come in and I can sit down at my bench and get started building.
Anyway, enough about me. I'm hoping to glean some valuable information from here and hopefully help some others out along the way.
