Bob, do you ever have trouble finding "racks" of spares in the store? I tried today, the guy at the meat counter (CERTAINLY not a "butcher") said that they don't carry racks of spares. They cut em all up into individual ribs. I was planning on doing them today, too.

I WISH I had a butcher like that. As a matter of fact, I wish I had any butcher. I have no butcher shop near me, and all the "meat counter guys" look like they just graduated high school. Almost always, they don't know the difference between back ribs and spares.

No, spares are never a problem to find around here. I did go to a store that had a sale on "southern" style ribs. I never heard of "southern" style before, so off I went to check it out. Here it was sliced up individual ribs. Left that store with no ribs lol.
 
all kidding aside, I'm pretty impressed that any local butcher can make it in today's Wal-mart world. I think he manages to be competitive by good meat, good customer service, and low overhead. I'll buy meat at the local mega-store, but when I want to smoke, I head down to Gary's every time. I wish everybody had that kind of access.
 
Perhaps it is a regional thing, but we have no problem getting cryovaced sparerib racks at Sams, Walmart, BJ's, and the local grocery stores. As far as "southern style ribs," down here they sell what they call "country" ribs which can be any one of several things, but usually sliced pork butts.
 
Vernon, These were not country style, (which I love) but little strips of cut up rib. Only thing I would think of doing with them is cooking really high/fast in a pan, maybe with that Asian red sauce on it. I would have no purpose for them, but Country style I would have bought.
