Grease Clean Up

Hello. I've had my WSM 22.5 for nearly a year now and cooked a brisket over the weekend. I keep my WSM in my shed and was loading two, double 20 pounders of K Blue and accidentally knocked the WSM over and although it didn't completely go on its side, all of the brisket grease that was leftover in the water pan spilled inside the middle section and the charcoal bowl...the grade was dripping out of one of the vents. I used the clay saucer method with double heavy duty foil wrapped around the bowl and the grease was puddled in the foil. My question is, what is the best method to clean the inside so I don't have a grease fire on my next cook. Just soap and water? I'd rather not burn the grease to the unit. Any suggestions? I would appreciate it.

Here's my suggestion, but I didn't tell you this, because the owner won't like you doing it. Find yourself a coin-op car wash and wash/rinse it there. Try to be courteous to the next fella by doing your dirty work right over the floor drain...imagine leaving grease on the concrete and then him tracking that into his vehicle. :(

If I were to do it at home, I'd rinse, then scrub it down with a brush and warm soap/water, then rinse well and dry. You might consider a degreaser like Simple Green to help, too.

I do the same thing that Chris suggested except I have a good pressure washer. I wash then spray with Simple Green and let it sit for awhile then rinse. For really heavy buildup I have used Acetone but that's rare.
 
A couple of times I have found a small amount mold inside the main part of the smoker (not sure why) but I wanted to clean it without completely degreasing the whole smoker and removing all the gunk we all strive for after getting a new smoker. I just took it apart and sprayed heavy duty oven cleaner on it and let it sit for a little while, then rinsed it off, being careful not to spray any on the lip edges of any of the parts.

For heavier gunk I just used steel wool with the oven cleaner. I clean my kettles this way also and have never had a problem with the oven cleaner damaging the porcelain in any way. It also doesn't leave any residue.
