Thought I'd share a trick I use with it, get yourself the aluminum baskets from Weber and use them on each side when you cook, holds heat longer and when you are just about done temp wise move the baskets together in the center right under the bird or roast and get a nice sear, works fantastic. Just pull your grease pan first
