Got a Little Butt.. Part Deux (pics)
...on the smoker. Its been going for 5.5 hours now. Made up a little homemade slaw and gonna modify some Bush's baked beans to go with it. More pictures to follow unless my appetite gets in the way.
So 10 hours later, this is what I got. Off to the kitchen...
Im not real good at plating food, and really not patient enough for pictures during chowtime, so please forgive me.
The coleslaw is homemade from a stolen recipe on Amazingribs.com. The beans are Bush's that I added bacon and onion too. The guacamole was made with tomato, garlic powder, mediterranean sea salt, pepper, and onion.
I had two sauces for the pork. One was Meatheads Lexington Dip, and the other pictured was Blues Hog Regular and Tennessee Red mixed together.
I injected the butt with apple juice, coated it with virgin olive oil, and rubbed it with Memphis Dust.
It smoked for 10 hours with Kingsford blue and hickory with a little apple chips mixed in.
It was my first butt on the new smoker and other than the newb learning curve, it went well. The meat was moist and tender and momma was happy.
