Good butcher in northern NJ?

Hi all,
Anybody know a good meat purveyor in Western Essex County NJ? I'm in West Caldwell; Vila Meats is near me and they've had some OK reviews, but they seem to just order in what you ask them for, add their markup and that's it. No real selection of barbecue cuts except maybe a couple of racks of loin backs. Good for grilling meats and saussages but that's about it.

Would like to find a good source for briskets, backs and spares, preferably with trained, experienced staff and a very good selection to choose from. Costco is fine for backs and is usually the cheapest but no chance of finding good briskets in the one out near me, and the butchers in the back don't even want to talk to customers.

Where do commercial establishments purchase their meats from? Can the general public ever hope to be able to get that kind of a source? Not interested in supermarket meat counters for the most part.
 
I'm familiar with two places which are a little bit farther west in Morris County.

One is Sussex Meat Packing in Wharton that is located very close to the Rockaway Mall and Green Village Packing which is located down a dead end road near the Great Swamp. While both places are good, Green Village is the kind of place where you see the live animals going in one door and meat orders coming out the other.

I'm north of you in West Milford, but I've used Restaurant Depot in Pine Brook. Good prices if you have a resale certificate. Their pork is ok, but I think the beef is better. I've been pleased with their Angus brisket packers. Good luck and let us know what else you find.
 
Sorry to go off subject here but.

Gray, I have been considering the resturant depot but do not have the resellers cert. Are the difficult to aqquire, and how does one go about it. Thanks up front.

Also for butcher check this place out. http://www.johnsmarket.com I have not been there but have spoken to them and they stated they can get any and everything.
 
I'm very close to Restaurant Depot but don't have a resale certificate nor would it make sense for me to go to all the trouble for maybe 10 or 15 cooks a year. We do have Kings nearby as well as a Whole <STRIKE>Paycheque</STRIKE>Foods but both are extremely high-priced and probably not worth the extra money.

What I'd like to get is a source where I can tell them I'd like a brisket aged about 6 or 7 weeks from processing and have their staff not only be able to sell me what I'm looking for but to understand why that's important. For ribs, while Costco or BJs ribs in cryo is convenient and inexpensive, you can't really select the perfect marbling. Of course, the added bonus of having spares trimmed to STL ahead of time would be nice

Of course, having a source for steakhouse-quality dry-aged prime would be amazing too.
 
Graz, Restaurant Depot is easy. They don't seem to be too strict about the source of the certificate, as long as it's a resale certif. Maybe your business dept. can help you there, or a small business owner friend.

Peter, Have you tried Corrado's in Wayne, NJ? A very good butcher dept, helpful staff (Vincenzo the butcher) and some dry-aged beef. It's worth the visit.
