One of the park staff dropped this off to me this morning, said make something :o

Any ideas or do i gotta call me mom. Cant remember how she did goat.

Got the goat leg all seasoned with salt, pepper, fresh garlic, pinches of chili powder and some thyme on both sides.

I was going to do the brine that my friend Tommy sent me, as i was getting things together i said .....SELF Ya gots no fridge room for a brine bucket :o

Had to cut 4" off the shank.

I've only had goat in curry. Delicious. Goat tends to be very lean. I recommend foiling to finish with some liquid. Best of luck!
