Go Niners! Homage to Golden Boy Pizza coming up.


 
Our Son was working in SF for 6 months and he raved about that pizza.
Growing up in Chicago, that means a lot.
Lots of respect for Chi-town pizzas. We have an authentic place here in town Chicago Fire.

Golden Boy is epic. And my baseline is growing up in NYC. Get there if you’re ever in SF. Cash only. Oldschool.
 
First stretch after rest and rise. Another rest and then blind bake and then finish bake.

Dough was 640g. 62% hydration. I can share the recipe if anyone wants it.

Blind baked and sauce is cooked into the dough. And then cheesed and back into oven to cook.

Yeah the dark measured 168 15 minutes ago.
I made an adjustment early on and didn’t go back and check and cooked it u dear 300 for about 45 minutes.
So it’s taking forever.
The MRS however is very on top of the temps......she asks for updates and doesn’t like when it when I cook the breast to the minimum....I like a nice 162 after rest temp and the breast comes out juicy.
She is always a scardy cat.....I’m just going to lie to her and tell her it’s at 165 and she is okay with that.
Funny girl.
Getting the bbq warm earlier.

I’m expecting questions about my non traditional truss.......
Maybe others do it like this too, I like this method over a traditional truss.
