Have a couple slabs of baby backs humming away over some maple. First time using it. Gotta be better than the oak I tried lol.
 
Never been an Oak fan for anything. Can't see anything wrong with Maple though. Maybe with a maple syrup, garlic glaze or a roasted tomato based sauce.

Now I'm hungry and all I have are shanks in the crock pot not ready for hours.

I love maple but it tends to burn a little faster and hotter so may affect the temps your used to cooking at. The first time I used maple lump I wasn't paying close enough attention and it pretty much all burnt off on me well before I expected it. I get sugar maple from my bush and dry it for a year and it gives great flavour.
 
Grew up 250 miles north of Green Bay,maple was everywhere and most times it was maple that was used to smoke with.I need to get back there with my truck as i have been out for some time.......maple smoked trout,a cold beer and i won't need much else!Betcha a cold one you'll like it-
