Getting WSM up to 325 in 25 degree weather

I am smoking my first turkey tomorrow morning for a work Thanksgiving feast that is set to start at 12. The weather is supposed to be in the 20's in the AM. I have a 15lb bird to smoke. Any tips on how to get the WSM up to 325? I plan to dump in a full unlit chimney, and then dump in a full lit chimney with all vents wide open. Think that will do it, or will I need more lit? Approximately how long is the cooking time? 4 hours?

Thanks

Are you using water in the pan? If you are, you will probably not see that temp..

No water in the "foiled" pan, if you prop the door open a tad to start with or do the upside down door mod that is in the modification section...you will have no problem getting that temp! You can start with the door propped open and close when you start seeing your desired temp...

Good luck!

You can also position the lid to one side where it's cracked open. I use a skewer for this. Basically it's creating a larger chimney.

You can't flip and prop the 22.5" door open as the opening has a round top.
As long as the wind isn't whipping, it shouldn't be a tough cook. Might want to add more unlit as the 22 can be a fuel hog.

Thanks Chad...I forgot about that on the 22!! Coffee hasn't kicked in yet!!

I suspect you will get pretty close with no water, vents open and a hot fire anyhow!
