Funky smelling ribs

Hi All,

I was just about to prepare some ribs, but when I opened the package the ribs came in, I was greeted with a pretty funky odor. Some of them smell almost like sulfur. I just bought the meat last nite. Is this normal, or is my meat rotten ?

That sounds like the smell, from the Cryovac packaging. Read somewhere that it is a gas of some sort. It dissipates very quickly. If it does not dissipate, I would take action, and return them.
I take some white vinegar and just splash on the pork parts, just to make sure all that smell is gone. Not necessary though.

You can get meat that is bad in cryovac, if it smells bad don't take a chance, take them back.
They were more than likely going bad when they went into the packaging.

Been there, smelled that! Had several cryovacs of baby backs for a party a few years ago. Opened them up the night before to prep them and out came the most putrid odor. I rinsed them but they were still bad. Took them back for a refund and got replacements just in time for the party.

I usually don't get any odor when I open a cryovac of ribs. As Jim Morrissey mentions, once in a blue moon you'll get a slight odor that quickly dissipates, but that's the exception, not the rule. If you get an odor that's putrid and stays with the meat for several minutes, I'd take it back.

After I just read your post, I thought about something. I have noticed that odor more with beef ribs in particular. I wonder if they are somehow packaged different? The beef ribs I buy are IBP, whole rib, cut in half. The smell lasts for about 5 seconds after the cryovac is opened, and then gone.
Anywho, I hope Sam, updates us on the final outcome. Always informative, to find out the end result.

Hi All,

Thanks for the advice. There was one particular package of ribs that smelled a lot worse than the rest, so I tossed that one. Once the air cleared, I gave all the remaining ribs a good sniffing, and they all smelled fine. I smoked them all, and they came out great.

Now I've got a new problem, I made too many ribs! What does one do with leftover ribs?
