Wife gifted me a "meat academy course". It was interesting, learned alot about meat production and meat production in Switzerland. Sadly most participants are... Lets say not as involved in cooking in these courses. When it comes to actual cooking, most of these courses don't let you screw up.
Part of the course was prepping fungus-aged pork chops.
And the actual cooking way done by teacher. But he knew his stuff. Cooked like three tomahawks, several of the fungus pork chops, and a inside skirt all on a big BGE. All finished at the same time.

I got to take some ledtovers home.

And seared it on my kettle.


Gotta say... Overcooked it slightly. Not used to these big, thick cuts. And maybe my cheapo instant read sucks. I thought it was getting overcooked, but it read 40C so I continued on.
But man, they do taste different. I love it. They are expensive. But so good... But expensive...
