Agreed, the flat side of the grates are good for a griddle. But, I've migrated over to my blackstone or cast iron skillet.I have migrated from dwelling only on crosshatch grill marks to now trying to blend them with an overall crust. If you have room you can use half your GrillGrates upside down as you mentioned to do an initial overall sear and then switch to the regular side to add some decoration. I think that is potentially a good combination of better taste and “eye candy” which is also part of the equation for many people to whom I serve grilled steaks.
