Frito Pie and other Texas-style side dishes

I'm going to a birthday party for someone from Texas and they want the party to be Texas-themed.

I've never had Frito Pie but I've heard it's good, and that could be a cool Texas side dish to have.

I've googled recipes for that but they all look fairly complex. Looking for something a little simpler if possible.

If not frito pie, then maybe there is another good texas style side dish that I could make. Please let me know if you have any ideas.

And oh for the main course, they are doing a taco bar. So it would need to be something that goes with that....
 
I grew up in TX. Frito Pie was served in school, church gatherings, football games, and at the fair. It's just Fritos and chili on top. I still eat it. http://www.fritolay.com/recipes/recipe/fritos-chili-pie

As a kid we would take a small bag of Fritos and lay it on its side front of bag down, open the back seam of the bag, add chili, cheese, salsa, etc and eat the Fritos Pie with a fork right out of the bag. That's the way you get it at football games and the fair, too.

Another idea is TX caviar. It's a black eye pea mixture used as a dip. http://m.foodnetwork.com/recipes/619600

Amen! This brings back some memories of football games and other events where that was a very popular snack food sold, it was like Texas nachos...lol. I haven't had this in 25 years, but I think this weekend I will :)

thanks Dwain. I think someone already called the sheet cake, but that Frito Pie recipe sure sounds good and is easier than the other recipes I found. Do you think this side would go well with a taco bar or would it be overkill?

Sounds like the taco bar will have meat, lettuce, tomato, avocado, sour cream, salsa, & cheese.

Sounds like the taco bar will have meat, lettuce, tomato, avocado, sour cream, salsa, & cheese.

Your call but I think it will go great since you have all the fixins.

Large can tamales
Bag of corn chips
Large can chili
Shredded cheese

Layer tamales - corn chips- chili - cheese

Bake 350 till heated thru

Here is a simple and easy recipe from my files

Frito Pie

• 3 cups Fritos corn chips
• 3/4 cup chopped onion
• 1 cup grated cheddar cheese
• 2-1/2 cups chili (your favorite -- homemade, canned, whatever)
Preheat oven to 350°F.

Spread 2 cups of Fritos in a baking dish. Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.

Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.
 
I have had the kind where you just open up the little bag of fritos , spoon in some hot chili (even canned is good),throw on some shredded cheese....like dwain was talking about. That is so simple and so good. Easy to make too and virtually no cleanup.
