Friday Nite Surf-n-Turf

Picked up a couple of Angus New York strips for the Turf part. Salted both sides and let rest for about 1 hour.

Steaks were then marinated with Moores Marinade for another 1 hour.

For the Surf part, I marinated a couple of cod fillets in Mr. Yoshida's for about 30 minutes.
Couldn't find any decent salmon so cod was the name of the game for tonight. Marinated the shrimp in Cajun Injector Buffalo Butter (gooooooood stuff!) for about 30 minutes.

Steaks, dusted with Penzeys BBQ 3000, onto direct heat for about 2 minutes on each side.

Moved the steaks to indirect and put the cod, dusted with Penzeys Northwoods Fire and a little dill weed, on direct for about 1 minute each side.

Steaks were pulled at 137 internal, by my thermapen; and the shrimp, dusted with Arizona Dreaming were added indirect to the grill.

Plated with some hot crashed potatoes (more goooooood eats!) which were seasoned with S/P and Arizona Dreaming. I was in a hurry to get the potatoes into the oven, so didn't get any prep pictures.

Everything turned out great! This was my first time doing potatoes this way and definitely not my last time. I will probably invest in a potato masher as my attempts with a fork were sorely missing the proper techniques for mashing the potatoes.

Outstanding dinner Mike! It's been a while, but I believe the recipe that I followed for the crashed potatoes involved using a glass to quickly smash them a little. You might actually do too well crashing them with a masher.
 
No tater masher needed in my book. Great looking cook from start to finish.

Mike,

You can fix the corners of your photo box using the tape below. Put it on the corners before you put the paper on the sides and you won't see dark spots in the seams when it's done...

Thanks Stuart. This is only a temp paper box that I put together awhile back. I know about the seams and usually try to keep them out of the photo. I have an actual photo tent, with the colored backgrounds, that I haven't set up yet. Probably will be doing it this weekend.

I just built one out of 2" PVC central vaccum tubing myself after struggling with the seams on the cardboard box. Only reason I mentioned it...

Food looks great, as do the shots!

Looks great Mike! Really dig your plated pics. No xp with whiteboxes but i guess no flash? And what lamp do you use to light it up?(kelvin wise?)

I saw a daylight kit once...Overpriced,probobly overrated aswell. But if there is a cheap way of replic that im all ears.

I use regular "daylight" compact fluorescents at 5500K for mine, no flash. The trick is to set white balance using a grey card, or using the custom kelvin if your camera supports it. Any Ikea clip on desk lamp works great as a reflector for the lamp...and you could always use a normal 3000K lamp from Ikea and set white balance to tungsten, or shoot in RAW and adjust the color temp in post.

Thanks everyone for their kind comments. I agree Bob, Jim has large photo box that I wish I had! Wolgast I don't have my actual whitebox set up yet. I do have the daylight 5500 lights, but for me right now, I am just using my Nikon SB-700 flash on my Nikon D7000. Any white balance problems I take care of in lightroom. I am no pro photographer, just like to take good pictures without a cluttered background.
 
Seams? What seams?

I did not notice before someone mentioned it, I was busy looking at the fantastic food!

OK- i know it's not perfect, it's late, and I'm off to bed, but this took me 30 seconds.

I do not own a photo box, as you can see from my cluttered backgrounds.

I wish I had one like Mr. Lampes!
