Friday Night Ribs

I was fortunate enough to have a doctor’s appointment scheduled for this morning, so I took the
rest of the day off. I thought I had bought a twin pack of babybacks yesterday. Last night when
I was getting them ready I discovered that the package was split spare ribs. So after removing
the membrane I gave them a coating of mustard and then seasoned them with Simply Marvelous
Spicy Apple Rub. This morning gave them a light coating of Butcher BBQ Honey Rub.


Put onto the WSM, using lump charcoal and 4 chunks of cherry wood.
I am using a little foil as a heat shield to protect the ends of ribs.


I foiled at the 3 hour mark. Out of the foil after 1 hour. Coated with the juices in the foil and put
back onto the WSM to set up.


I let them set up for 30 minutes then pulled them off the WSM. Both are toothpick tender. Will wrap
in foil until dinner is ready.


Plated with some farmer’s market green beans that were seasoned with leftover pulled pork,
cooked in the crock pot all day long, and leftover potato salad and coleslaw.


It was a fun day, weather was beautiful and dinner turned out delicious!

I give credit to my wife Bev on the beans. Blood tests were actually really good, other than the damn needle ;).
Doctor says my cholesterol and everything else is excellent, so can pass on the salads this week anyway!:D
