Pretty simple to make fresh pasta sauce. All you need is a knife and a box grater.
4 large tomatoes sliced in half
1-2 small zucchinis
1 small Walla Walla Sweet onion diced
6-8 cloves of garlic minced
1 bunch of fresh basil chopped
salt & pepper to taste
1-2 table spoons of olive oil
Dice onion, season with salt and pepper. Add to pan with heated oil and saute over medium heat. While onion is cooking prep the rest of the veggies. Using the smallest side of the grater box grate the flesh of the tomato. Do this until all you have left is a thin skin. then using the next size up grate the zucchini into the tomato pulp. Next add the basil and salt and pepper. When the onions are translucent add the garlic and cook for another couple of minutes. Let onion and garlic cool if to be served cold. Once cool combine with tomato mixture. Serve cold over cooked pasta. If serving warm add tomato mixture to pan with onions and garlic and heat.
This is a basic recipe and you can adjust the flavor how you like it. It's a refreshing option on a hot summer day. We added bay shrimp and warmed it up and served over pasta and our smokey Joe prawns.
